Ingredients

6 servings
Tamarinda lemon sized block, or 8 pods shelled
Water1½ litres (500 ml for boiling)
Sugar⅔ cup
Ice cubesplenty

Method

4 steps
  1. 1Boil the tamarind in 500 ml water for 10 minutes, then let it soak until cool.
  2. 2Mash with your hands and push through a sieve, discarding seeds and fibres.
  3. 3Stir the pulp with the sugar and remaining water until dissolved.
  4. 4Chill and serve over ice.
Serve it like this

Serve chilled in tumblers over ice, with a chilli salt rim if you like.
