Ingredients

4 servings
Prawns (shrimp)500 g very fresh, peeled and butterflied
Lemon juice⅔ cup fresh lime juice
Green chilli4 serrano style chillies
Coriander leaves (cilantro)½ cup
Water¼ cup cold
Saltto taste
Cucumber1, thinly sliced
Onion1 small red onion, thinly sliced
Avocado1, sliced
Tortilla chipstostadas or chips

Method

4 steps
  1. 1Butterfly the prawns, salt lightly and lay in a shallow dish. Use only very fresh prawns, or blanch them for 30 seconds if unsure.
  2. 2Blend lime juice, chillies, coriander, cold water and salt until bright green.
  3. 3Pour over the prawns and chill for 15 to 20 minutes, turning once.
  4. 4Add cucumber and onion, top with avocado and serve with tostadas.
Serve it like this

Serve in a chilled shallow bowl, prawns fanned in green chilli water with cucumber and onion, tostadas standing alongside.
