Potato3 to 4 medium, cubed
Poppy seeds (white poppy seeds)⅓ cup
Mustard oil2 tbsp
Nigella seeds¼ tsp
Green chilli4, 3 slit and 1 for the paste
Turmeric (ground turmeric)a pinch, optional
Sugar½ tsp

Waterabout 2/3 cupMethod
- 1Soak the poppy seeds in warm water for 30 minutes. Drain and grind to a smooth paste with one green chilli and a splash of water.
- 2Heat the mustard oil until it just starts to smoke, then lower the heat. Add the nigella seeds and slit chillies.
- 3Add the potatoes with the turmeric and salt. Fry, stirring, until the edges are pale gold.
- 4Stir in the posto paste and the water. Cover and cook on low, stirring now and then, until the potatoes are tender.
- 5Uncover, add the sugar and cook, stirring, until the paste dries and coats every piece. Finish with a few drops of raw mustard oil.
