Ingredients

4 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Sugar40 g in batter, 30 g in filling
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Baking powder1 tsp
Egg1
Water1 cup
Butter2 tbsp
Peanuts½ cup, roasted and crushed
Sweet corn kernels (corn kernels)½ cup, creamed or boiled
Salta pinch

Method

4 steps
  1. 1Whisk the flour, 40 g sugar, salt, soda, baking powder, egg and water into a smooth batter. Rest 30 minutes.
  2. 2Mix the crushed peanuts with the remaining sugar.
  3. 3Heat a heavy pan on medium low, pour in batter and swirl it up the sides. Cover and cook 3 to 4 minutes.
  4. 4Dot with butter, sprinkle peanut sugar and corn, fold in half and slide out. Cut into wedges.
Serve it like this

Cut into wedges, stack on a plate or paper, and serve warm with kopi or teh tarik.
