Arancine al ragù.

Ingredients

6 servings
Arborio rice2 cups
Saffrona pinch
Butter2 tbsp
Parmesan½ cup
Water4 cups
Minced mutton (goat mince, ground goat)200 g beef or mutton mince
Tomato puree150 g passata
Green peas½ cup
Onion1 small
Mozzarella120 g, diced
Maida (all-purpose flour, plain flour)⅔ cup, for batter
Breadcrumbs1¼ cups
Cooking oil (vegetable oil)for deep frying, about 7 tbsp absorbed

Method

5 steps
  1. 1Cook rice in salted water with saffron until absorbed. Stir in butter and parmesan, spread on a tray and cool completely.
  2. 2Cook onion and mince until browned, add passata and peas and simmer to a thick ragù. Cool.
  3. 3Take a handful of rice, cup it, fill with ragù and mozzarella and close into a ball or cone.
  4. 4Dip in thick flour and water batter, then roll in breadcrumbs.
  5. 5Fry at 175C until deep golden, 5 to 6 minutes.
Serve it like this

Serve hot on a paper lined plate, one per person cut open to show the molten centre, with marinara for dipping.
