Ingredients

Glutinous rice (sweet rice)½ cup
Rice½ cup
Chicken, curry cut (bone in chicken, small pieces)bone in pieces
Ginger8 cm, julienned
Garlic12 cloves, half fried crisp
Onion1, chopped
Fish sauce2 tbsp
Water7½ cups
Cooking oil (vegetable oil)2 tbsp
Turmeric (ground turmeric)a pinch, or kasubha for colour
Egg4, hard boiled
Spring onion (green onion, scallion)sliced
Lemoncalamansi wedges

Method

4 steps
  1. 1Fry half the garlic in oil until golden and crisp; set aside.
  2. 2In the garlic oil saute onion, remaining garlic and ginger, add chicken and fish sauce and cook until opaque.
  3. 3Add both rices and toss, then water and turmeric. Simmer, stirring often, until thick and the chicken is cooked through.
  4. 4Shred chicken back in. Serve topped with egg, fried garlic, spring onion and calamansi.
Serve it like this

Ladle into bowls, top with half an egg, a heap of fried garlic and spring onion, with calamansi and fish sauce at the table.
