Ingredients
Keluak nut paste15 keluak nuts, cleaned and soaked, or ready paste
Shallots15
Dried red chilli15, soaked
Fresh red chillies (fresh red chiles)5
Garlic6 cloves
Galangala thumb
Lemongrass2 stalks
Turmeric (ground turmeric)1 tsp
Candlenuts5
Shrimp paste1 tbsp
Cooking oil (vegetable oil)4 tbsp
Chicken, curry cut (bone in chicken, small pieces)1 kg bone in pieces
Tamarindpulp, in 1 cup water
Waterincluding tamarind water
Palm sugar (gula melaka)1½ tbsp
Salt1 tsp
Method
5 steps
1If using whole nuts, soak them 2 to 3 days, changing the water daily, then scrub. Crack the opening and dig out the flesh; discard any that smell sour.
2Pound the shallots, chillies, garlic, galangal, lemongrass, turmeric, candlenuts and shrimp paste into rempah.
3Fry the rempah in the oil over low heat for 15 minutes until the oil separates.
4Add the chicken and coat, then the tamarind water, water and keluak (whole stuffed nuts or paste).
5Simmer 40 minutes until the chicken is tender and the gravy dark. Season with palm sugar and salt.
Serve it like this
Serve in a deep bowl with whole keluak nuts and a small spoon to dig out the paste, plenty of rice alongside.
