Chicken, curry cut (bone in chicken, small pieces)bone in pieces
Shallots4
Garlic6 cloves
Turmeric (ground turmeric)1½ tsp
Ginger2.5 cm
Galangal2.5 cm, bruised
Coriander seeds1½ tsp
Cashews3 candlenuts, or cashews
Lemongrass2 stalks, bruised
Bay leaf (indian bay leaf)2 bay leaves
Saltto taste
Water1⅔ cups
Cooking oil (vegetable oil)absorbed from frying

Method

4 steps
  1. 1Grind shallots, garlic, turmeric, ginger, coriander and candlenuts into a paste.
  2. 2Simmer chicken with the paste, galangal, lemongrass, bay leaves, salt and water until the liquid nearly dries and chicken is cooked through.
  3. 3Fry the chicken in hot oil until golden and crisp.
  4. 4Fry the leftover spice bits until crunchy and scatter over.
Serve it like this

Pile the fried chicken on a plate with crunchy spice crumbs over, rice, sambal terasi, cucumber and cabbage on the side.
